Got a nice 5 lb. Pork Butt on the pit this morning.
Now for the 10 hour wait.

Why don't you cut it in half to reduce cooking time?

The stuff freezes well if we dont eat it all in the next couple days.....which will likely happen.
Plus that 5 lb butt will be a lot less than five lbs once it's done.
Plus there's a big ol bone in it thats a little tough to eat.
And bigger chunks of meat work better when smoking.

Hard to believe that has 10 hours to go. If it already looks like that, it will probably be a crisp in 10. hours.

It usually takes around two hours a lb. but it may finish sooner. Ya go by temp,it's ready when it's ready. In this case when it hits 200 degrees. I'll wrap it in peach paper when it hits the stall,usually around 160 which will help it get past the stall faster. Then I'll unwrap it to firm up the bark once the temp starts climbing again.

A lot of that color is the rub.

Ya try and get a bit of it into every sandwich.
It's not burned when you cook at 250 it's the caramelization of the sugars in the rub and the smoke.

That looks like mine an I serve it with a black pepper vinegar BBQ sauce, rice, hash and cold slaw.

Dill slices,onions,red vinegar sauce and coleslaw.
