I may have posted these before...they're also called salmon croquettes. We had them for dinner tonight and they are fabulous.
Canned salmon runs less than $3 a can. I fed three preteens and moi with one batch....plus cooked home canned carrots on the side.
1 can salmon.
2 eggs
1 c Panko bread crumbs
3 tbsp mayo
Chopped gr onion
Pepper
Dill
Lemon juice
Pepper
Drain the salmon, dump into a bowl. Take out big circular back bones and ugly skin. Bones are soft from canning, don't worry about the straight bones. I like to mash the salmon up. Add all the rest of the ingredients, mix it up. Drop by big spoonfuls into hot oiled skillet, mazh a little flat. Fry till both sides are brown.
Totally yummy, the kids devoured them.
