Not so surprising, really. Life on Earth originated long ago and there are no living witnesses to it. Any attempt to explain how life came to be will either be guesswork or based on the written records. Nearly all the written records are about one creation story or another. The current gueses are mainly some version of Darwinism.

You mean that very literally I'm sure. Fossils are not "written," they are fossilized. Writing requires a deliberate attempt to communicate and/or create records.

At most, fossils show that there were once many animals and plants on Earth that are no longer living. They dont tell us anything about how they came to be, why those particular animals died off and why there are so many different species.

All that is gusswork, except for some creation myths which do have written records.

Lucky for us, we have a detailed fossil record of the development of life from simple to complex creatures

There is a species of moth in London that developed mutated wings that made them look like they were spotted with soot. This helped them blend into sooty buildings and survive. This is now an entirely different moth from any other moth.
The "London Peppered Moth evolution" was a hoax, including posed photographs that would not have occurred naturally - dead moths pinned to tree trunks that living moths do not cling to. No new species came about, it's just the same peppered moth.
To answer your question. It was recently discovered that all blue eyed people came from one single person that had a mutated gene resulting in blue eyes. This person was most likely from Scandinavia. Eskimos are so closely related to Mongols, they likely would never mutate a blue eyed gene. We don't know, of course, but there might have been other factors. The ancient people populating these northern regions were an ocean going lot. Inuit is not so that might have done something to the mutated gene.
But you said that the genes mutated in response to the environment. If you misspoke about that, just say so. It happens to everyone. The best of us just admit it and move on.

Most mutations are not beneficial. The carriers die or are sterile. Biology is a fascinating subject. Some schools have eliminated biology completely. It's a shame.

Some school districts avoid The topic of origin of species since that is not required to understand modern biology and since public schools are required to teach the demonstrably false religion of Darwinism if they address origins of life.

Also, it is the one topic about which no open-mindedness or critical thinking us allowed.

I see people in here fighting like glue-sniffing civet cats over the issue when it ultimately makes no difference to a single person on the face of the earth.

Can't we just go back to fighting about things that matter like Reality TV and The Cola Wars?
 
"Darwinism" does not address creation.

I don't believe it was ever meant to. Darwin came up with a very workable theory that explains why there is such a proliferation of species on this planet. It was never meant to explain everything back to The Big Bang.

I would disagree in the sense that it makes a great deal of difference. Schools need to educate children in the context of a competitive world. Public schools have a different mission vs. a madrassah. Public schools full of dreamy-eyed ID'iot creationers, people who loathe science, people who believe their bibles are the only books they need for an education is a prescription for disaster. We suffer badly in this country from a lack of science and engineering grads.
