Godfather. The movie is still quoted today. Goodfellas. It certainly gets your attention. Casino. I like it for the same reason. City of God. Violent street gangster film from Brazil. You will not be bored with it. Scarface. Love the gun battle at the end.
Name some more.

I liked LA Confidential. Miller's Crossing, and Once Upon A Time In America, the long version, along with the usual Godfather series and Goodfellas, although those latter two were not very realistic. I also thought Bugsy was pretty good, and The Valachi Papers. Valachi and LA Confidential were probably the most true to real life in this list.

Goodfellas is a true story. According to Michael Franchese and others who knew the people involved the movie is not entirely accurate. Paul Vario had mean temper in real life and the movie makes Henry Hill look like more than he really was. But the Air France and Lufthansa robberies really happened and so did the murders shown in the movie.
