Spam in the mini smoker

We know this country is in a serious situation when people start smoking Spam.

I'm not being a snob--beans is one of my favorite foods. And sardines, right out of the can. But I hate Spam. Even looking at pics of it makes me a little gaggy. Meat should not have that consistency.

You claim to be old and yet you're posts indicate otherwise.
Turned 65 yesterday. How many young people do you know that eat sardines?

Quite a few actually.
They eat em for the same reason I did in my youth.
Easy energy.

Well it must have been going down hill for awhile now cuz I've been making this for years...



Smoked bologna is great also.

Oh...that turned out good. Can't eat it all though...just a little...

One's going into split pea soup and the other is for black-eyed peas and cornbread.

Each got a different rub over yellow mustard... A Jamaican Jerk and a brown sugar mix. They are both so good, I don't think it matters which goes in which.

Letting them cool...then into the fridge.
 
It's that time again... Three hours on the mini smoker...20 briquettes.

Start with 10...add 5 on the hour. with soaked wood of your choice...

... This one is apple wood smoked.

One will be sliced up for breakfast with eggs and toast, the other is bacon flavored... Going to dice it up and try it in spaghetti carbonara...
