If your capture rate from traffic is low or as you describe your ticket average is too low then you need to adjust the business model to fix the problem.
Marketing the upsell is crucial for larger ticket averages.

Like a coffee shop that focuses solely on coffee drinks...but has croissants too.
When a menu that focuses on combo meals of a coffee and a croissant will sell a better ticket average than coffee alone.

And that's a key difference.

There's a reason it's initially easier to buy a new car than to buy a used one. It's easier to trade in your old car when buying a new one... even though you can get twice as much for your old car selling it online.

And when in McDonald's it's easier to buy a combo meal than a single burger.
