The difference is actually easy to understand. When the Las Vegas shooter was spraying bullets at a crowd, he was firing at what the military call an Area Target. In other words, just firing as fast as he could into the crowd. A hit, any hit is what he was going for.
But pistols tend to be used much closer, and more time is spent aiming, and you end up with more vital organs hit. It is unlikely that you would die from being shot in the forearm, or the calf. You would be hurt certainly, but probably not die. The Las Vegas shooter had a killing rate of about 10%, which is about average for such things. The round the AR uses is preferred for a number of reasons, but especially because it creates a “militarily significant wound” that is to say that the individual shot is now wounded, and requires care. That means someone has to carry him off the field of battle, taking three or four people out of the fight, instead of just one.
One of the horrors the troops had to endure in the First World War was the sound of screaming men, wounded and crying out for help, for their Mothers, for anyone to please just help them. It wears on the nerves, and causes fear in the troops who endure it.
Now, if the bullet from the AR strikes the chest or head, then chances are you have a mortal wound. However, that is the same story for a pistol round, which is why people are taught to shoot center mass, because it increases the odds for a vital organ to be hit.
Spray and Pray technique does not have a high rate of vital hits, because the part you are shooting at is relatively small. The FBI used a picture of a Milk Bottle target for a long time, to show you how small the vital organs you were aiming at really were.

Now hits outside of the Bottle might kill you, but probably won’t. They’ll hurt, and cause some damage, but probably not death, providing you get medical treatment in a timely manner.

Being hit by a pistol bullet inside the milk bottle, is much much worse than being hit by a rifle round outside of it. What most people don't seem to understand is most of the these mass shootings are done indoors in a confined and crowded area in those conditions a person can be as deadly with a handgun and couple of extra clips or a shotgun with some extra shells as they can with an AR-15 or any other semi automatic rifle. The only way a rifle is more deadly is you are shooting from a long distance like the UT tower shooter in the 1960s or the Las Vegas shooter and those type are rare.
