Tipping before the service?

It's happened a couple of times to me in the last week or so. Go to a restaurant, not a five star gig but a chain, you order your food and pay at the counter and they bring it out to you. You are prompted to tip before you even see the food or the server does any work.

The first time I just did it without really thinking about it until I sat down.

So the second time I didn't tip at the counter, deciding to wait and see how the food and service was. It was fine, and I left a decent tip. Then the kid came over a bussed the tabel as we were going out the door and looked surprised, glanced around, and put the money down the front of his pants as if he was stealing it.

SO I guess it's tip up front or nothing for the server.

And I hope the kid bussing tables doesn't have any part of food prep.

I saw that at good restaurant on Cape San Blas, while on vacation last month. I don't tip for the service before I get the food or the service. I tip on the whole thing (the food and the service) only, so I added nothing to the bottom line when paying before we were even seated or served, but they also had a tip jar on the counter. The service was OK, that is, wait wasn't very long and somebody brought the food. The food was good. I put a good tip in the tip jar, supposing they split among whoever. Who knows, I probably just tipped the woman at the cash register, taking the order. Well, at least she got the order right.

He likely just didn't want to report the tip to his employer or have his tips pooled.

It's none of managements business, IMO. I always tip the server in cash. It's up to them if they want to report it to management or the taxman.
 
Preemptive tipping sounds like some kind of socialist bullshit. But this does present a teaching moment. What happens to the tip money at the end of the night? Under the socialist system the money is evenly distributed among servers regardless of how well they did their jobs (thereby de-incentivizing good work and encouraging mediocrity). In a communist system the restaurant (I.e., the state) keeps the tip money and tells the staff to get fucked.
