You are correct re: nitrogen, but it isn't because of moisture--air can be dried as well. The nitrogen displaces the oxygen in the air and provides an anaerobic environment which makes it more difficult for bacteria to grow.Actually, it isn't air in the potato chip bags, but they're filled with nitrogen.
