Lots of mom and pop pizza shops have ruled in NYC for decades. Everyone eats the independent pizza makers pizzas....The corporate giants like pizza hut or dominoes or Pappa John's have failed miserably because of their expensive and lousy tasting pizza.

And so they are trying to destroy the pizza shops so they can get even more kickbacks from the corporate giants.

If they really cared they would offer no cost catalytic converters/scrubbers for the pizza ovens. But they don't care....well they do its just not in the constituents best interests but their own.

They might be heating oil fired ovens....not necessarily natural gas. But it's usually the older pizza shops....the ones that have been around a really long time that use coal or heating oil.
And that hint of petroleum taste and slightly burnt bottom is extremely addictive. I miss it to this day. (And it's been 20 years) It's completely carcinogenic and the mercury in the coal doesn't do me any favors either.....but I really enjoy it.
