I love lemon cookies. These guys do a beautiful GF lemon cookie but are kind of hard to find.

I've heard that in Europe they don't worry about gluten free because the grains are different. Healthier basically.

I have tried some organic, non-hybridized wheat flour and not done well on it. Can't tell you how much I miss wheat.

I'm a recently confirmed Catholic and Catholic law says there must be some wheat in the recipe they use for the Holy Eucharist, but the amount of wheat in the low-gluten Host is so small that it doesn't bother me. I tried the regular Host for a week and got quite uncomfortable.

It's a drag. I wonder if I could tolerate the regular Hosts made in Europe.
