Trump can't just say he pleads the 5th to everything and refuse to testify.
He doesn't need the 5th Amendment, he's the President, he can invoke executive privilege to avoid having to be interviewed or testify in the first place.

That in itself would be grounds for congress to begin impeachment hearings as the president and all Federal officials swear an oath to uphold the constitution and laws of the land and pleading the 5th is an admission you have violated that duty.
Er..... you don't seem to understand what executive privilege is (*hint: it's not the same as "pleading the 5th") or know that there's a ton of precedent regarding its use or that SCOTUS has consistently refused to rule on its use or limits.
As far as impeachment goes.... good luck with that since there's neither statutory or constitutional grounds to support the "High Crimes and Misdemeanors" threshold.
- Even if Trump exerts his executive privilege avoid a Mueller interview or grand jury subpoena, he can still be indicted or arrested.
