Need Ginger Cookie recipe.

I need an easy ginger cookie recipe. I am looking one up, but it would be great if any of you had one to share. thanks! :D

Ginger Snaps

3/4 cups shortening
1 cup sugar
4 tblspn molasses (real molasses, not Karo)
1 egg
2 cups flour
2 tspn baking soda
1 tspn cinnamon
1 tspn ground cloves
1 tspn ground ginger

Thoroughly cream shortening and sugar. Add molasses and egg. Combine dry ingredients in separate bowl and add.

Roll into small balls and roll in granulated sugar until coated and place on greased cookie sheet. Bake @ 350 10-12 minutes.


These are what I grew up on, my mom always baked. These are my fav so I don't make them very often, cause I'd eat them all! lol I prefer them crisper rather than softer, dipped in milk they are great.
 
Man, I'm just about to start baking some chocolate, orange and cranberry cookies to take to a friend tomorrow! Glad I'm not the only one baking cookies!!

The first thing I will tell you is to get NEW ground ginger to insure its freshness.





1 ½ cup butter
1# dark brown sugar

2 eggs
½ cup dark molasses

4 ½ cups flour
4 teaspoons baking soda
1 teaspoon all spice
2 teaspoons cinnamon
1 Tablespoon ground ginger

Sift dry ingredients
Cream the butter and brown sugar
Add the eggs and molasses
Add the dry ingredients
Chill
Form into ball and roll in white sugar.
Bake 375 for about 12 mins.


These freeze GREAT!

That is somewhat what I used, but no brown sugar and I used orange juice instead of water, they turned out pretty good.

I made some before with real ginger root. They turned out too moist, and not gingery enough. I should have also used powder, too.
 
Gingerbread Men
(a favorite from when I was a wee girl)

Blend together:

1 c. shortening
1 c. sugar
1/2 tsp. salt

Add:

1 egg
1 c. molasses
2 tbsp. white vinegar

Mix and add:

5 c. white flour
1 1/2 tsp. baking soda
1 tbsp. ground ginger
1 tsp. ground cinnamon
1 tsp. ground cloves

Chill dough for 3 hours. Roll out and cut into favorite shapes. Decorate with colored sugars or leave plain to decorate with frosting. Bake at 375 for 6 minutes (+/- depending on size of cookie).

I'm done for awhile too! This morning I made toffee bars, peanut butter cookies, and the dough for chocolate crinkles. Later got to make more snickerdoodles, the kids ate most of them. Going to make lemon bars too! Later, the cherry pies. Smells good, but I'm getting tired of licking my fingers!
