what spices do you need for it?

For the various Indian curries and biryanis you need various spices that you can't find in alot of places.


so true-----but I have experience-----uhm-----way back---when I first
encountered indian food-----I started cooking it. ---sorta.......
I got some recipes and needed CUMIN--
My mom never used cumin-----long story---but my father's mom
grew up in London----and for HIM----boiled cabbage was a food.
He found pumpkin pie "too spicy"

anyway---back to cumin----I did not even know that it is freely
available in hispanic places ---back then----

over time I got to know where to go ---even in the old days
in my totally white fluffy bread suburban area. Did you
know that they use CARDAMOM in denmark?-----you cannot
do danish cooking without cardamom---of all things---not that
I am suggesting going to denmark for cardamom----but ----
as far as I know----you cannot grow the stuff in a flower pot.

some people cannot live without cardamom in the coffee----
I am not referring to danes

I have to laugh....I grew up in the era of "fluffy white bread" (who's only use was that you could mold it into little figurines and then squash them in epic natural disasters on the cafeteria table). Because we moved back to the US, finally, from France - we were spoiled by seriously good bread and it was impossible to find! My mom ended up baking bread :) Of course my brother and I consumed and entire loaf between us right from the oven ;)

My mother's side of the family is Danish/Norwegian - we used cardamom a good bit, particularly in rice puddings and certain holiday cookies.

I'm getting hungry....

Did you ever wonder how CARDAMOM---of all things---got to Denmark?

I have... I learned about cardamom from Indian friends----just the
powder. Later on---I noted a SAUDI colleague----who ---whenever
he drank coffee-----pulled a seed from his pocket and tossed into his
coffee. Of course I asked ---"what's that" (hoping it was an upper)
----"cardamom" me.. "is that a saudi thing" him.. "only for
wealthy people" (oh----ok---sure-....) later on by the time
cardamom was no longer exotic for me I got to hubby who now needs
cardomom pods----whole dried ginger ---cinnamon---nutmeg------cloves--
to elaborate a mix---for HIS coffee ---he compounds himself---very
important. He told me that HIS father made the spice mixtures
at home too----FINE WITH ME---he does it with a mortar
and pestil (yes---I have an electric grinder---but if he wants to
PESTIL away---why should I object?)

. -----for the cardamom---I have to find
the green pods----not the white ones or the black ones------do not ask
me why-----but I HAVE INDIANS NEARBY-----lucky me

as far as I know----cardamom--even for arabia got there from INDIA

how did it get to Denmark?

I think you can find a lot these days on the internet. My mother made a moroccan fish dish when I was there and the spices were from the internet :)

What I hate....

"in the old days we used to do...omg talk about old"

In Toronto though we never thought about what we'd do. Jerk was a staple. I'm Ukrainian Irish, cabbage rolls were a staple along with perogies. Just our lives.

Yeah thats true, you can order the spices if need be.

Thank goodness we can now. I'm big into SA now. Blessedly I can get all my ingredients local. Oh man they smoke.

I'm having the blast of a life time learning Peru. Omy gosh....what awesome food. You learn as you go.

When you learn food you learn the peoples. It's breathtaking.
