Vegetarian Meals

I could definitely be a vegetarian, wouldn't even need fake meat or tofu. One of my favorite quick meals is a big old baked potato loaded with brocolli in sharp cheese sauce, or chili, cheese, and a little sour cream, or sauteed mushrooms onions and peppers. The skins with a little butter, s&p are the finishing touch. And rice and beans? Better than mac and cheese, imo.

In the summer when veggies are fresh out of the garden, I often skip the protein altogether. I love veggies. Except brussel sprouts and peas. Don't get peas near me.

I'd still have to use salt pork in my baked beans, though. There is no substitute.
 
One of my friends who is 100% vegan said to em a long time ago (before I was vegetarian) that when I consume animals that I am consuming the pain anguish and fear the animal had in the last breath before being slaughtered. It really stuck with me when he said that talk about a guilt trip.

Yeah, I definitely think there's something to that. I mean when you consider the immense pain and fear and terror they go through during the slaughter process, that HAS to have some sort of effect on those who consume it, especially those who do it knowingly, in my view.

Also, I think there is something about turning a blind eye to needless violence toward animals that affects mankind overall. Leo Tolstoy once said "as long as there are slaughterhouses, there will be battlefields." I think it's because that apathy and callousness in regard to violence to animals can make us callous to needless violence overall.

As a small l libertarian, I believe in the non-aggression principle. And I don't believe that principle applies only to humans.

Still, I am not as good as Vegans are I am only vegetarian.

I don't see it that way, I think in most cases, it comes down to what we have become aware of. There are so many good people who are simply unaware of what they are participating in because it is always kept so hidden from the public. As the saying goes, "when we know better, we can do better."

Here's one quick example. Whenever one eats eggs, they are supporting the brutal killing of baby male chicks, who are considered a "waste product" of the egg industry. They are gathered up and put into a grinder alive, or put into big plastic bags and suffocated to death.

That's just one of the reasons to not eat eggs. To me, there's something very evil about treating baby male chicks (creations of God) as mere garbage, on a massive scale.

I'm a vegetarian my niece is vegan I don't have the discipline to be vegan. In the winter I like lentils.
People go from one extreme to another. Something to do with "swinger" culture and wife-swapping etc.

You don't need to swear off meat for the rest of your life to plan and prepare, or just enjoy a vegan or vegetarian meal.

I would add pearled barley to the above recipe of for a bean-and-mushroom veggie-burger pattie.

TImes are tough. What if Ragnarök happens or Trump loses the election? Millions upon milions of people will be starving to death if the Democrats take over with their gas chambers and plans of mass murder for population control.
 
In Utah, a lot of people do food storage. Some stores even offer a few vegan and vegetarian options. But yeah no matter who gets elected it's always good to have a neighborhood plan and emergency food preparedness.

"Homemade caramelized onion tart made with red onions, leek, and other healthy ingredients. This onion pie is called “Zwiebelkuchen” in Germany and it’s a traditional fall recipe. The dish is vegan, gluten-free, soy-free, easy to make, flavorful, and delicious."

Pie Crust:
  • 1 cup + 1 tbsp (160 g) gluten-free flour (*see notes)
  • 1/2 cup (60 g) almond flour (*see notes)
  • 2 tbsp (2 tbsp) ground flax seeds or chia seeds
  • 5 tbsp (5 tbsp) water
  • 2 1/2 tbsp (30 g) coconut oil softened
  • 1/3 tsp (1/3 tsp) sea salt
Onion Tart Filling:
  • 3 medium-large (300 g) onions peeled and diced
  • 2 medium (200 g) bell peppers diced
  • 2 small (130 g) stalks of leek finely chopped
  • 3 cloves (3 cloves) of garlic minced
  • 3 tbsp (30 g) chickpea flour
  • 1 heaped tbsp (10 g) cornstarch or arrowroot flour
  • 1/3 cup (80 ml) water or vegetable broth
  • 1 tsp (1 tsp) onion powder
  • 3/4 tsp (3/4 tsp) sea salt or more/less to taste
  • 1/2 tsp (1/2 tsp) paprika
  • 1/2 tsp (1/2 tsp) cumin (optional)
  • ground black pepper to taste
  • 1/2 tbsp (1/2 tbsp) fresh thyme or 1/2 tsp dry
  • 1 tbsp (1 tbsp) tamari or soy sauce (GF if needed) or coconut aminos
  • 3/4 cup (180 ml) plant-based milk
  • 7 oz (200 g) vegan cheese of choice (optional)
  • Fried onion rings on top (optional)
INSTRUCTIONS


  • Check the step-by-step process shots and the video above in the blog post.
  • Put 2 tbsp ground flax seeds (or ground chia seeds) to a small bowl, add 5 tablespoons of water and mix with a whisk. Set aside for 5 minutes.
  • For the pie crust, simply add all ingredients to a bowl and mix with a spatula or your hands until the dough sticks together. You can also use a food processor.
  • Press the dough into a greased/oiled 8-inch tart or pie dish and up the sides. Put it into the fridge.
  • Mix the chickpea flour, cornstarch, spices, and water or vegetable broth in a bowl with a whisk. Set aside.
  • Heat oil in a pan over low/medium heat and add the chopped onion, leek, and bell pepper. Cook the veggies with a lid on for about 15-20 minutes or until lightly caramelized, stirring frequently. Stir in garlic for the last few minutes and preheat the oven to 390 degrees Fahrenheit (ca. 200 °C).
  • Add the chickpea flour mixture and stir immediately, as it will thicken very quickly. Also, add plant-based milk and tamari.
  • Let simmer for a few more minutes (the mixture should thicken considerably), then turn off the heat. Pour the filling into the pie crust and smooth it evenly.
  • You can also add vegan cheese of choice (I used my easy vegan cheese sauce) and pan-fried onion rings on top but this step is optional.
  • Bake in the oven for about 25-30 minutes or until nicely browned. Enjoy! Store leftovers covered in the refrigerator for up to 3-4 days.

I made a wonderful lasagna aubergine last weekend. I can say without ego, that it was the best I’ve made...ever.

I made the red sauce and let it cook down all afternoon. I used a mandolin and cut the eggplant into medallions. I breaded them, baked them until firm-ish, and, built round towers layering each with some ricotta, mozzarella, and, red sauce. It was truly amazing.

The cookbook I'm working with at the moment is a no-to-low iodine diet. It's almost annoying having to figure out what to eat, because there's a lot you can't eat across the board, even certain vegetables and food dyes. And there's no pictures either. Blech.
 
I'm made this fabulous Indian dish a couple weeks ago when it got chilly. It's wonderful b/c you can literally use grain or lentil in the pantry.

I'm made this fabulous Indian dish a couple weeks ago when it got chilly. It's wonderful b/c you can literally use grain or lentil in the pantry.

Great time of year for this, we had snow today.

It certainly is, but I'm one of those people that love stews/soups and I eat them regardless of the season. It's not uncommon for me to be chomping down soup in the summer, even on the hottest of days. You're from one of the mountain states, no? I'm watching the Broncos/KC game it's snowing like crazy.
