The state GOP has no authority over state elections laws.

As private citizens belonging to a private organization, they’re at liberty to back whomever they want.

But Trump will remain on the Utah ballot as the official, designated Republican presidential nominee.

I never said anything about getting trump off the ballot. I'm just curious what would be the consequences of the state GOP backing mccullin instead if the Republican candidate. Mccullin is already on the ballot. Just not with an R next to his name. So why couldn't the state GOP just decide to push him instead of trump? What could trump or the establishment do to stop them?

Why not? The governor, senators and several representatives have already spoken out against trump. He got barely any support in the primary and tons of citizens morally offended by his behavior. And a republican running as an independent candidate already on the ballot with strong support in the state.
